If I'm calling a female my darling should it be "mon cheri" or "ma cheri".

Does the masculine/feminine thing work in acordance to who said it, who they're saying it to or does cheri have it's own like objects do?

If you are a male, you will say ma chérie

un chat --> mon chat whoever says it
une voiture --> ma voiture whoever says it

It becomes tricky sometimes:
une idée --> mon idée whoever says it

As a native speaker, I never really thought that through I guess when a feminine noun starts with a voyel, mon is used instead of ma (Ma idée sounds terrible)

You're right about the "vowel" thing, Julien.
Think about "ampoule", "épaule", etc... you've got to put "mon" when it's masculine and when it's feminine beginning with a vowel.
For the rest of the feminine words, "ma" works fine.

Il faut dire " Mon idée ..." = c'est l'idée de moi.
